Crush one leaf between your fingers and smell it. Fresh leaves give a strong warm, camphor‑like aroma. If it smells faint or has no scent, the oils are gone and the leaf is mostly flavorless.

Laurus nobilis (Mediterranean/Turkish bay) has a warm, mild, complex aroma. Umbellularia californica (California bay laurel) is much stronger and more pungent; use about half the amount if substituting.

Bay leaves are safe to cook with but should not be eaten whole. They stay stiff during cooking and can be a choking or digestive discomfort risk. Always remove bay leaves completely from food and tea before serving.

Bay leaf aromatic oils need time and heat to move into the food. Adding at the end gives little flavor. For best aroma, add at the start and let it cook for at least 30 minutes or the full cooking time.
